This is my favorite salmon recipe of all time and it never fails me. I’ve been using it for years and it’s always been foolproof. And it just happens to be the easiest, healthiest, and the most delicious salmon recipe to date, and it uses only 3 ingredients. It’s also oven baked so no mess and easy cleanup. Hooray!
You can easily double or triple this recipe and make it into a quick weekday or lazy weekend meal, or turn it into a dinner party, as it hits the spot every time with that wonder deep umami flavor from the miso and carmelization from the maple syrup. Yummo! And it’s so darn easy!
2 wild caught, sustainable (preferably) salmon fillets
2 tablespoons organic miso; red or white
I prefer red due to its deeper flavor, but either works nicely.
2 tablespoons organic maple syrup.
Taste and adjust to your liking. Can add less or more.
White or black sesame seeds
In a small bowl, mix the miso and the maple syrup and set aside.
In an airtight container, smear some marinade on the bottom.
Place the salmon fillet in the container and rub the marinade all over each salmon, including the top, bottom and the sides.
Close the lid and place it in the refrigerator for at least 2 days. You can marinate up to a week. I usually cook it within 3-4 days. But the longer it marinates, the more flavor the salmon will have.
When you’re ready to bake, scrape the miso off with a spoon. Miso can burn in the oven.
Preheat the oven to 350 degrees and bake the salmon for 7-9 minutes.
Make sure you don’t over bake. This is a common mistake when baking fish. The salmon can be slightly under cooked. You can also place the salmon under the broiler for 4-5 minutes, but keep an eye on it.
Sprinkle some sesame seeds and/or nori flakes (if using) on the salmon, and serve it hot with your favorite rice or veggies of choice.
This time, I had it with organic jasmine rice with chopped green onions, and I sauteed some organic frozen corn with red onions in olive oil, and seasoned it with garlic salt, and freshly ground pepper. Keep it simple and enjoy!
